Hi! I’m Sonia. I like tea, gardening, drinking wine, and watching Twilight when I’m sad for some reason. I also really REALLY like to cook for my friends and family. Making family friendly vegan recipes and getting to share them with the people I love is one of my very favorite things. Since moving from vegetarian to vegan over 12 years ago, I’ve made all the mistakes you can imagine. From cooking for two as a single mom, to today where I make dinner every night for my family of four, I’ve learned tips and shortcuts that get dinner on the table fast and usually for around 2 bucks a plate.
Making dinner every night can become challenging, and coming up with something interesting that everyone will love just adds to the task. Here, I am collecting the gems in my repertoire. Tried and true recipes that meet some pretty rigorous qualifications. For me a perfect meal has to be:
- Easy – we’re talking weeknights here. One hour max for most recipes.
- No obscure ingredients – I cook from a stocked fridge, freezer, and pantry for most meals. If it requires an extra trip to the grocery store, I’ll probably make something else.
- THE KIDS HAVE TO EAT IT– who likes putting the time and energy into cooking for your family only to have your two-year-old turn her nose up at it? TBH it still happens but I try damn it.
- Adaptable– don’t have almond milk, but you have unsweetened soy? Awesome. It will work. Want to make it gluten-free? I’ll have a modification. Everyone can enjoy these recipes – no matter the dietary (or logistical) restriction.
I want everyone to have a dish that they feel so freaking pumped about making they are not intimidated when invited to a party or are surprised by guests. Everyone can cook, and with a little practice, no one has to be afraid to FEED THE VEGANS.
